Which food has a value as strong and universal salt? It has been for thousands of years an essential ingredient of the diet of all people on Earth. The salt is what gives and preserves the flavor of life. Since time immemorial, it exploits the value, as shown by the long caravans continue to travel across the Sahara, where the Tuareg travel thousands of miles to exchange livestock millet and cons of heavy salt blocks in Mali. Salt is neither a food nor a herb but a mineral consisting simply of Chlorine and Sodium, two molecules essential for the functioning of body cells. Responsible for the retention of fluids (hydration) and minerals, it is absolutely necessary for our survival!

There is not one but two varieties of salt, which differ in their properties: they are sea salt and rock salt. Both are from residue left by the seas or oceans, unlike the rock salt found in rocks, mountains, or deserts, is likely more "dry", while the salt from tidal salt water is more responsible.

Salt enhances the taste of food, promotes secretion of digestive juices, increases salivation (and appetite), and this contributes to good digestion. But be careful, excess, it has the opposite effect! Therefore you should avoid salt heavy or greasy foods, like cheese.

Rock salt is likely drier, and was long used for its therapeutic properties, including India, where we find different varieties in shades gray, pink, or black. Its high sulfur content would make it particularly beneficial to ease digestion and promote absorption.

But salt becomes harmful when it is abused because it causes over the years, a hardening of the arteries, head of hypertension


Some basic recommendations

The average dose of salt per day should not exceed two grams. Most processed foods, packaged or processed meats (or salting), smoked fish, bread plain, and all the "snacks" (chips, crackers, peanuts ...) usually contain lots of salt. Note that most vegetables contain naturally occurring minerals.

For people prone to water retention, are advised to replace the salt as much as possible rock salt, of a more "dry".

Some remedies

P o prevent sore throat, gargle regularly do with a pinch of salt, the juice of a quarter lemon and a little water hot.
